Description

A creamy, crunchy sandwich filled with mashed chickpeas, tender apples, and crunchy pecans, perfect for a cozy lunch.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 apple, diced
  • 1/2 cup pecans, chopped
  • 1/4 cup tahini
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Whole grain or gluten-free bread

Instructions

  1. Mash the chickpeas in a bowl with a fork until mostly smooth.
  2. Add the diced apple, chopped pecans, tahini, lemon juice, salt, and pepper. Mix until well combined.
  3. Spread the chickpea mixture on slices of your favorite bread to make a sandwich.
  4. Serve immediately or refrigerate for later.

Notes
