Description

Delightful Asparagus Stuffed Chicken Breast filled with a creamy medley of asparagus, sun-dried tomatoes, and gooey mozzarella cheese.


Ingredients

  • 4 chicken breasts
  • 1 cup asparagus, trimmed and cut into pieces
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the asparagus, sun-dried tomatoes, and mozzarella cheese together until combined.
  3. Cut a pocket in each chicken breast, being careful not to cut all the way through, and stuff the mixture inside.
  4. Rub the outside of the chicken with olive oil, garlic powder, salt, pepper, and Italian seasoning to enhance the flavors.
  5. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and golden on the outside.
  6. Serve warm, and enjoy every comforting bite!

Notes

You can prepare the chicken a day in advance and refrigerate. Reheat in the oven for juicy results!
