Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente (8-10 minutes).
- Cook the guanciale or pancetta in a large skillet over medium heat until crispy.
- Whisk together the eggs, pecorino, parmesan, a pinch of salt, and black pepper in a bowl until well combined.
- Reserve some pasta water, then drain the spaghetti.
- Add the hot pasta to the skillet with the crispy guanciale and remove from heat.
- Pour the egg and cheese mixture over the pasta and stir quickly to create a creamy sauce, adding reserved pasta water as needed.
- Serve immediately, garnished with additional cheese, black pepper, and parsley if desired.
