Ingredients

  • 100g guanciale or pancetta, diced
  • 2 large eggs
  • 50g pecorino cheese, grated
  • 50g parmesan cheese, grated
  • Salt
  • Black pepper
  • Fresh parsley (for garnish, optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente (8-10 minutes).
  2. Cook the guanciale or pancetta in a large skillet over medium heat until crispy.
  3. Whisk together the eggs, pecorino, parmesan, a pinch of salt, and black pepper in a bowl until well combined.
  4. Reserve some pasta water, then drain the spaghetti.
  5. Add the hot pasta to the skillet with the crispy guanciale and remove from heat.
  6. Pour the egg and cheese mixture over the pasta and stir quickly to create a creamy sauce, adding reserved pasta water as needed.
  7. Serve immediately, garnished with additional cheese, black pepper, and parsley if desired.

Timing is key for a creamy sauce. Always reserve pasta water before draining to adjust the consistency later.
