Description

A creamy, golden dish of baked eggs on a bed of wilted spinach and cherry tomatoes, topped with melted cheese. Perfect for brunch gatherings or cozy breakfasts.


Ingredients

  • 4 eggs
  • 1 cup of spinach, chopped
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of ricotta cheese
  • 1/2 cup of shredded mozzarella cheese
  • 1/4 cup of grated Parmesan cheese
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the chopped spinach and cook until wilted, about 2-3 minutes.
  3. In a baking dish, layer the cooked spinach and halved cherry tomatoes.
  4. Spoon the ricotta cheese evenly over the vegetables.
  5. Carefully crack the eggs on top of the cheese layer, spacing them out.
  6. Sprinkle the mozzarella and Parmesan cheese over the eggs.
  7. Season with salt and pepper to taste.
  8. Bake for 15-20 minutes, or until the eggs are set to your liking.
  9. Garnish with fresh herbs if desired, and serve warm.
