- 4 eggs
- 1 cup of spinach, chopped
- 1 cup of cherry tomatoes, halved
- 1/2 cup of ricotta cheese
- 1/2 cup of shredded mozzarella cheese
- 1/4 cup of grated Parmesan cheese
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add the chopped spinach and cook until wilted, about 2-3 minutes.
- In a baking dish, layer the cooked spinach and halved cherry tomatoes.
- Spoon the ricotta cheese evenly over the vegetables.
- Carefully crack the eggs on top of the cheese layer, spacing them out.
- Sprinkle the mozzarella and Parmesan cheese over the eggs.
- Season with salt and pepper to taste.
- Bake for 15-20 minutes, or until the eggs are set to your liking.
- Garnish with fresh herbs if desired, and serve warm.
