Description

A cozy dish of roasted seasonal vegetables glazed with a sweet and tangy balsamic vinegar.


Ingredients

  • 2 cups mixed seasonal vegetables (e.g., broccoli, carrots, bell peppers, zucchini)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon dried herbs (e.g., thyme or rosemary, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop the vegetables into even pieces and place them in a large mixing bowl.
  3. Whisk together the balsamic vinegar, olive oil, salt, pepper, and optional garlic powder and herbs in a small bowl.
  4. Pour the balsamic mixture over the chopped vegetables and toss to coat them evenly.
  5. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 20-25 minutes until tender and caramelized.
  7. Serve warm as a side dish!

Notes

Make ahead by prepping vegetables and balsamic mixture in advance. Store in the fridge until ready to roast.
