Ingredients

- 2 cups mixed seasonal vegetables (e.g., broccoli, carrots, bell peppers, zucchini)
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder (optional)
- 1 teaspoon dried herbs (e.g., thyme or rosemary, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Chop the vegetables into even pieces and place them in a large mixing bowl.
- Whisk together the balsamic vinegar, olive oil, salt, pepper, and optional garlic powder and herbs in a small bowl.
- Pour the balsamic mixture over the chopped vegetables and toss to coat them evenly.
- Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes until tender and caramelized.
- Serve warm as a side dish!
Notes
Make ahead by prepping vegetables and balsamic mixture in advance. Store in the fridge until ready to roast.
