Ingredients

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a large bowl, mash the bananas until they are creamy and smooth.
  3. Stir in the brown sugar, granulated sugar, and melted butter until well combined.
  4. Add the egg and vanilla extract, mixing well to incorporate everything.
  5. Sprinkle the baking soda and salt over the mixture and stir to combine.
  6. Gradually add the flour, mixing just until incorporated—be careful not to overmix!
  7. Fold in the chocolate chips and walnuts if using. The chocolate chips should be evenly distributed.
  8. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick comes out clean when inserted in the center.
  10. Allow the muffins to cool slightly in the pan before transferring them to a wire rack to enjoy warm.
