- 2 ripe bananas
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup melted butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda

- 1 1/2 cups all-purpose flour
- 1 cup chocolate chips
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
- In a large bowl, mash the bananas until they are creamy and smooth.
- Stir in the brown sugar, granulated sugar, and melted butter until well combined.
- Add the egg and vanilla extract, mixing well to incorporate everything.
- Sprinkle the baking soda and salt over the mixture and stir to combine.
- Gradually add the flour, mixing just until incorporated—be careful not to overmix!
- Fold in the chocolate chips and walnuts if using. The chocolate chips should be evenly distributed.
- Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean when inserted in the center.
- Allow the muffins to cool slightly in the pan before transferring them to a wire rack to enjoy warm.
