Description

Ingredients

  • ½ cup active sourdough starter
  • 1 ¼ cups lukewarm water
  • 3 cups all-purpose flour
  • 1 ½ teaspoons fine sea salt

Instructions

  1. Combine the yeast starter and lukewarm water in a large bowl.
  2. Stir in the flour, then add the fine sea salt.
  3. Use a fork to mix everything until stiff, then bring the dough together to form a ball.
  4. Place the dough ball in the bowl, cover it, and let sit for 30 minutes.
  5. Stretch and fold the dough a few times, then reform it into a ball.
  6. Cover the dough again and let it rise overnight (about 8 hours) in a warm place.
  7. Turn the dough onto a floured surface and fold it a couple of times to tighten it into a ball.
  8. Let it sit for 15 minutes.
  9. Shape the dough again into a ball and place it into a well-floured proofing basket.
  10. Cover and let it rise for 2-3 hours or until doubled in size.
  11. Preheat the oven to 450°F, preheating your Dutch oven if using.
  12. Carefully move the dough to a parchment sheet and place it in the Dutch oven.
  13. Cover and bake for 20 minutes.
  14. Remove the lid and bake for an additional 30 minutes until deeply browned.
  15. Cool the loaf on a rack before slicing.

Notes

For a unique flavor, customize the loaf by adding herbs, seeds, or cheese. Use a serrated knife for clean slices.
