Description

A delightful recipe for soft and fluffy Greek pitas, perfect for dipping or wrapping with your favorite fillings.


Ingredients

  • 1 ½ cups all-purpose flour (plus more for the surface)
  • 1 tablespoon active dry yeast
  • 1 teaspoon kosher salt
  • ⅓ cup warm milk
  • ⅓ cup warm water
  • 2 tablespoons olive oil (plus more for the bowl and cooking)

Instructions

  1. Combine the flour, yeast, and salt in a large bowl.
  2. Pour in the warm milk and water, mixing until everything comes together.
  3. Add the olive oil and knead the dough in the bowl until it forms a ball.
  4. Drizzle some olive oil into a clean bowl, rub it over the interior, place the dough inside, cover with plastic wrap, and let it rest for an hour.
  5. Dust your surface with flour, gently remove the dough from the bowl, and cut it into 8 equal-sized pieces.
  6. Stretch each piece into a circle and roll it out to about a ¼ inch thick.
  7. Heat a cast iron pan over high heat and drizzle in 1 teaspoon of olive oil.
  8. Place one rolled pita into the pan and cook for about a minute, then flip and cook the other side until golden.
  9. Repeat with the remaining pitas and drizzle with melted garlic and herb butter if desired.
