Description
Deliciously moist zucchini bars that combine vegetables with a light sweetness and comforting spices. Perfect for family-friendly dessert moments.
Ingredients
Scale
- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Prep the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
- Mix the Wet Ingredients: In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined. Then, add the eggs and vanilla extract, mixing until smooth and creamy.
- Prep the Zucchini: Grate the zucchini using a box grater or food processor. If it’s watery, gently squeeze out excess moisture with a clean kitchen towel.
- Combine Ingredients: Fold the grated zucchini into the wet mixture until fully incorporated.
- Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Gradually add this dry mixture to the wet ingredients, stirring just until combined. Avoid overmixing!
- Add Optional Mix-ins: If you’re feeling adventurous, fold in nuts or chocolate chips here for extra flavor and texture.
- Bake to Perfection: Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Cool & Slice: Once baked, allow the bars to cool in the pan for about 10 minutes before transferring to a wire rack. Once fully cooled, slice into squares. Enjoy warm or at room temperature!
