Ingredients

  • 1 lb beef, cut into cubes
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 23 cloves garlic, minced
  • 23 green chilies (e.g., poblano or jalapeño), chopped
  • 4 cups beef broth
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat a little oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Add the beef cubes and cook until browned on all sides.
  3. Stir in the cumin, salt, and pepper.
  4. Add the diced potatoes and green chilies to the pot, followed by the beef broth.
  5. Bring the mixture to a boil, then reduce heat and let it simmer until the beef is tender and the potatoes are cooked through, about 30-40 minutes.
  6. Taste and adjust seasoning as necessary.
  7. Serve hot, garnished with fresh cilantro.

Notes
