- 1 lb beef, cut into cubes
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2–3 cloves garlic, minced
- 2–3 green chilies (e.g., poblano or jalapeño), chopped
- 4 cups beef broth
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat a little oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the beef cubes and cook until browned on all sides.
- Stir in the cumin, salt, and pepper.
- Add the diced potatoes and green chilies to the pot, followed by the beef broth.
- Bring the mixture to a boil, then reduce heat and let it simmer until the beef is tender and the potatoes are cooked through, about 30-40 minutes.
- Taste and adjust seasoning as necessary.
- Serve hot, garnished with fresh cilantro.
Notes
This broth can be made ahead and refrigerated for 3-4 days or frozen for up to 3 months. Enhance flavor with lime juice, sour cream, or additional vegetables.
