Ingredients

- 1/3 cup butter
- 1/2 medium yellow onion, finely diced
- 1 1/2 cups long grain white rice
- 3 cups good quality chicken stock (or vegetable broth)
- Salt and pepper to taste
- 2–3 bay leaves
Instructions
- Melt the butter over medium heat in a large saucepan until bubbly and fragrant.
- Sauté the finely diced onion for about 5-6 minutes, until translucent.
- Coat the rice grains in the melted butter.
- Combine the chicken stock (or vegetable broth), salt, pepper, and bay leaves.
- Bring to a gentle boil, then reduce the heat to low and cook for 10-15 minutes.
- Let the rice steam on the burner for an additional 10 minutes after cooking.
- Fluff the rice with a fork, remove bay leaves, and serve warm.
Notes
Can be made ahead of time and reheated. Try adding herbs, lemon zest, cheese, or nuts for variations.
