Description

A heartwarming side dish of fluffy rice infused with buttery goodness and sautéed onions, perfect for any meal.


Ingredients

  • 1/3 cup butter
  • 1/2 medium yellow onion, finely diced
  • 1 1/2 cups long grain white rice
  • 3 cups good quality chicken stock (or vegetable broth)
  • Salt and pepper to taste
  • 23 bay leaves

Instructions

  1. Melt the butter over medium heat in a large saucepan until bubbly and fragrant.
  2. Sauté the finely diced onion for about 5-6 minutes, until translucent.
  3. Coat the rice grains in the melted butter.
  4. Combine the chicken stock (or vegetable broth), salt, pepper, and bay leaves.
  5. Bring to a gentle boil, then reduce the heat to low and cook for 10-15 minutes.
  6. Let the rice steam on the burner for an additional 10 minutes after cooking.
  7. Fluff the rice with a fork, remove bay leaves, and serve warm.

Notes

Can be made ahead of time and reheated. Try adding herbs, lemon zest, cheese, or nuts for variations.
