- 2 lbs (900g) boneless skinless chicken breasts
- 2 tbsp (30g) Cajun seasoning blend
- 1/2 cup (115g) unsalted butter (cubed)
- 1/2 cup (120ml) chicken broth
- 1/2 cup (120ml) heavy cream
- 1 tbsp (15g) cornstarch (mixed with 1 tbsp (15ml) cold water)
- 1 cup (200g) long grain white rice (uncooked)
- 2 tbsp (10g) fresh green parsley (finely chopped)
- 1 tsp (2g) coarse black pepper
- 1/2 tsp (1g) red paprika flakes
Instructions
- Prepare the chicken by placing the boneless skinless chicken breasts at the bottom of your Crockpot. Sprinkle the Cajun seasoning blend evenly over the chicken.
- Add the cubed unsalted butter generously over the seasoned chicken.
- Pour in the chicken broth over the chicken and butter.
- Let it simmer by covering the Crockpot and cooking on low for 6-8 hours or high for 3-4 hours.
- Make it creamy by removing the chicken and shredding it, then whisking together the heavy cream and cornstarch mixture and pouring it into the Crockpot.
- Return the shredded chicken back into the sauce.
- Prepare the rice in a separate pot according to package instructions.
- Serve the creamy Cajun butter chicken over the cooked rice and garnish with parsley, black pepper, and red paprika flakes.
Notes
For added flavor, a squeeze of lemon juice or crunchy toppings like bacon or breadcrumbs can enhance the dish.
