Description

Ingredients

  • 2 chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella cheese, diced
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup balsamic glaze
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Carefully cut a pocket in each chicken breast, taking care not to slice all the way through.
  3. Mix the cherry tomatoes, mozzarella, and basil in a bowl, creating a vibrant stuffing.
  4. Stuff the mixture into the chicken breasts and secure with toothpicks if necessary.
  5. Season the chicken breasts with salt and pepper to taste.
  6. Heat olive oil in a skillet over medium heat, then sear the chicken for 3-4 minutes on each side until golden brown.
  7. Transfer the seared chicken to a baking dish, then drizzle with balsamic glaze.
  8. Bake in the oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
  9. Serve hot alongside a fresh salad or your favorite side.
