Instructions
- Preheat the oven to 375°F (190°C).
- Carefully cut a pocket in each chicken breast, taking care not to slice all the way through.
- Mix the cherry tomatoes, mozzarella, and basil in a bowl, creating a vibrant stuffing.
- Stuff the mixture into the chicken breasts and secure with toothpicks if necessary.
- Season the chicken breasts with salt and pepper to taste.
- Heat olive oil in a skillet over medium heat, then sear the chicken for 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish, then drizzle with balsamic glaze.
- Bake in the oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
