Description

A creamy, spicy delight that warms the heart, filled with tender shredded chicken and zesty flavors, perfect for busy weeknights.


Ingredients

  • 2 cups shredded chicken
  • 1 can (10.5 oz) creamy soup (cream of chicken or your favorite alternative)
  • 1 cup spicy salsa
  • 1 can (4 oz) diced green chilies
  • 3 cups crunchy tortilla chips
  • Sour cream (for topping)
  • Diced tomatoes (for topping)
  • Fresh cilantro (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, creamy soup, salsa, and green chilies in a large bowl. Stir until well blended.
  3. Layer half of the tortilla chips on the bottom of a baking dish.
  4. Spread half of the chicken mixture over the tortilla chips, making sure it’s evenly distributed.
  5. Repeat the layers with the remaining tortilla chips and chicken mixture.
  6. Bake in the preheated oven for 25 minutes, or until the casserole is golden, hot, and bubbly.
  7. Remove from the oven and add your favorite toppings like sour cream, diced tomatoes, and fresh cilantro.
  8. Serve warm and enjoy!

Notes

You can prep this casserole a day ahead and store it in the refrigerator. Just bake it shortly before serving.
