Description

A delightful no-bake Cherry Tiramisu layered with silky mascarpone and luscious cherries, perfect for any occasion.


Ingredients

  • 1 cup strong coffee, cooled
  • 1/2 cup cherry juice
  • 24 ladyfingers
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup cherries, pitted and chopped
  • 1/2 cup cherry juice
  • 2 tbsp sugar

Instructions

  1. Combine the cooled coffee and cherry juice in a shallow dish. Dip each ladyfinger briefly into the mixture and place in a single layer in a serving dish.
  2. Whip the heavy cream with powdered sugar and vanilla extract in a bowl until stiff peaks form.
  3. Mix the mascarpone cheese until smooth in another bowl. Gently fold in the whipped cream until combined.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Combine chopped cherries, cherry juice, and sugar in a saucepan. Cook over medium heat until cherries are softened, then cool slightly.
  6. Spoon half of the cherry sauce over the mascarpone layer.
  7. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherry sauce.
  8. Chill for at least 240 minutes or overnight before serving.

Notes

For the best flavor, prepare a day in advance. Store leftovers covered in the refrigerator for up to three days.
