A delightful no-bake Cherry Tiramisu layered with silky mascarpone and luscious cherries, perfect for any occasion.
Ingredients

- 1 cup strong coffee, cooled
- 1/2 cup cherry juice
- 24 ladyfingers
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup cherries, pitted and chopped
- 1/2 cup cherry juice
- 2 tbsp sugar
Instructions
- Combine the cooled coffee and cherry juice in a shallow dish. Dip each ladyfinger briefly into the mixture and place in a single layer in a serving dish.
- Whip the heavy cream with powdered sugar and vanilla extract in a bowl until stiff peaks form.
- Mix the mascarpone cheese until smooth in another bowl. Gently fold in the whipped cream until combined.
- Spread half of the mascarpone mixture over the ladyfingers.
- Combine chopped cherries, cherry juice, and sugar in a saucepan. Cook over medium heat until cherries are softened, then cool slightly.
- Spoon half of the cherry sauce over the mascarpone layer.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherry sauce.
- Chill for at least 240 minutes or overnight before serving.
Notes
For the best flavor, prepare a day in advance. Store leftovers covered in the refrigerator for up to three days.
