- 2 tablespoons chipotle in adobo sauce
- 2 tablespoons honey
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups potatoes, peeled and chopped
- 1/2 cup milk
- 1/2 cup smoked gouda cheese, shredded
- 2 tablespoons butter
Instructions
- Preheat your oven to 375°F (190°C).
- Mix together the chipotle in adobo sauce, honey, garlic powder, salt, and pepper in a bowl.
- Coat each chicken thigh generously in the mixture.
- Place the thighs in a baking dish, arranging them snugly.
- Bake in the preheated oven for about 25-30 minutes, or until the chicken reaches a juicy internal temperature of 165°F (75°C).
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and mash them with milk, smoked gouda, and butter until creamy.
- Serve by spooning the smoked gouda mashed potatoes onto plates and placing the baked chipotle honey chicken thighs on top.
