Description

Tender chicken thighs glazed in a sweet and spicy chipotle honey sauce served with creamy smoked gouda mashed potatoes – a warm, comforting meal perfect for any occasion.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons chipotle in adobo sauce
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups potatoes, peeled and chopped
  • 1/2 cup milk
  • 1/2 cup smoked gouda cheese, shredded
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the chipotle in adobo sauce, honey, garlic powder, salt, and pepper in a bowl.
  3. Coat each chicken thigh generously in the mixture.
  4. Place the thighs in a baking dish, arranging them snugly.
  5. Bake in the preheated oven for about 25-30 minutes, or until the chicken reaches a juicy internal temperature of 165°F (75°C).
  6. Boil the potatoes in salted water until tender, about 15-20 minutes.
  7. Drain the potatoes and mash them with milk, smoked gouda, and butter until creamy.
  8. Serve by spooning the smoked gouda mashed potatoes onto plates and placing the baked chipotle honey chicken thighs on top.
