- 40 oz Refrigerated chocolate chip cookie dough
- 16 oz Cream cheese (softened)
- 1 egg (room temperature)
- 1/4 cup Granulated sugar
- 1/2 teaspoon vanilla extract
- 1 teaspoon lemon juice (optional)
Instructions
- Preheat your oven to 350°F.
- Place the cookie dough in the freezer for a few hours to firm it up.
- Allow the cream cheese to soften at room temperature for about 30 minutes.
- Sit one large egg out to reach room temperature.
- Line a 13×9″ pan with parchment paper or non-stick foil for easy removal.
- Slice half the cookie dough into 1/4″ slices and lay them in the bottom of the lined pan.
- Press the cookie dough gently into the bottom of the pan to create a crust.
- Bake the crust in the preheated oven for 10 minutes until it’s lightly golden.
- While the crust is baking, beat together the softened cream cheese, egg, granulated sugar, and vanilla extract at medium speed with an electric mixer until smooth and creamy.
- As soon as the crust comes out of the oven, spread the cheesecake batter evenly over the top.
- Slice the remaining cookie dough and place it in chunks over the cheesecake layer.
- Return the pan to the oven and bake for an additional 35 to 40 minutes until the bars are set and slightly golden.
- Let the bars cool in the pan before refrigerating for at least 2 hours.
- Once chilled, slice into squares and serve!
Notes
These bars can be made a day in advance for enhanced flavor, and they are freezer-friendly for up to two months.
