Description

Indulge in these creamy Chocolate Chip Cheesecake Bars with soft cookie dough layers, perfect for cozy gatherings.


Ingredients

  • 40 oz Refrigerated chocolate chip cookie dough
  • 16 oz Cream cheese (softened)
  • 1 egg (room temperature)
  • 1/4 cup Granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. Place the cookie dough in the freezer for a few hours to firm it up.
  3. Allow the cream cheese to soften at room temperature for about 30 minutes.
  4. Sit one large egg out to reach room temperature.
  5. Line a 13×9″ pan with parchment paper or non-stick foil for easy removal.
  6. Slice half the cookie dough into 1/4″ slices and lay them in the bottom of the lined pan.
  7. Press the cookie dough gently into the bottom of the pan to create a crust.
  8. Bake the crust in the preheated oven for 10 minutes until it’s lightly golden.
  9. While the crust is baking, beat together the softened cream cheese, egg, granulated sugar, and vanilla extract at medium speed with an electric mixer until smooth and creamy.
  10. As soon as the crust comes out of the oven, spread the cheesecake batter evenly over the top.
  11. Slice the remaining cookie dough and place it in chunks over the cheesecake layer.
  12. Return the pan to the oven and bake for an additional 35 to 40 minutes until the bars are set and slightly golden.
  13. Let the bars cool in the pan before refrigerating for at least 2 hours.
  14. Once chilled, slice into squares and serve!

Notes

These bars can be made a day in advance for enhanced flavor, and they are freezer-friendly for up to two months.
