- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
- Cream cheese frosting (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Mix the mashed bananas and melted butter until combined; the mixture should be smooth and creamy.
- Stir in the sugar, eggs, and vanilla extract, blending everything until it’s a beautiful golden color.
- Add the baking soda and salt, mixing well into the banana mixture.
- Gradually add the flour, stirring until just combined—try not to overmix, as we want a tender loaf.
- Mix together the brown sugar and cinnamon in a small bowl.
- Pour half of the batter into the prepared loaf pan and sprinkle half of the brown sugar mixture on top. Follow with the remaining batter and finish with the rest of the cinnamon-sugar mix.
- Use a knife to swirl the mixture gently through the batter.
- Bake for 60-70 minutes, or until a toothpick comes out clean.
- Allow to cool before optionally frosting it with cream cheese frosting.
Notes
Let the bread cool completely before slicing for perfect cuts, and feel free to customize with nuts or chocolate chips.
