Description

Delightful muffins infused with the comforting flavors of French toast, topped with cinnamon sugar and perfect for breakfast or brunch.


Ingredients

  • 4 cups brioche or challah bread, cubed
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)
  • Maple syrup (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large mixing bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, ground cinnamon, and salt until well combined.
  3. Add the cubed brioche or challah bread to the custard mixture, stirring gently to coat all the pieces.
  4. Allow the bread to soak for about 10-15 minutes.
  5. In a small bowl, mix together 1/2 cup sugar and 2 teaspoons ground cinnamon for the topping.
  6. Spoon the soaked bread mixture into the prepared muffin tin, filling each cup about 3/4 full.
  7. Sprinkle the cinnamon sugar topping generously over each muffin.
  8. Bake for 18-20 minutes, or until the muffins are golden and a toothpick comes out clean.
  9. Let cool slightly before removing from the tin.
  10. Serve warm or cooled with a drizzle of maple syrup.
