- 4 large eggs
- 1 cup milk

Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large mixing bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, ground cinnamon, and salt until well combined.
- Add the cubed brioche or challah bread to the custard mixture, stirring gently to coat all the pieces.
- Allow the bread to soak for about 10-15 minutes.
- In a small bowl, mix together 1/2 cup sugar and 2 teaspoons ground cinnamon for the topping.
- Spoon the soaked bread mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Sprinkle the cinnamon sugar topping generously over each muffin.
- Bake for 18-20 minutes, or until the muffins are golden and a toothpick comes out clean.
- Let cool slightly before removing from the tin.
- Serve warm or cooled with a drizzle of maple syrup.
