Description

A comforting and delicious cinnamon swirl coffee cake, perfect for chilly mornings or brunches.


Ingredients

  • 1 box yellow cake mix
  • 1/2 cup unsweetened applesauce
  • 1/2 cup water
  • 3 large eggs
  • 1 tablespoon ground cinnamon
  • 1/4 cup sugar
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. Combine the yellow cake mix, applesauce, water, and eggs in a large bowl. Mix until smooth.
  3. Mix together cinnamon and sugar in a small bowl.
  4. Pour half of the cake batter into the prepared pan. Sprinkle half of the cinnamon mixture over the batter.
  5. Pour the remaining batter on top, and sprinkle with the remaining cinnamon mixture and optional nuts.
  6. Swirl the cinnamon mixture into the batter gently using a knife.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean. Let cool before serving.

Notes

You can prepare the batter a day in advance. Leftover cake can be stored in an airtight container at room temperature for up to three days or in the fridge for a week.
