A comforting and delicious cinnamon swirl coffee cake, perfect for chilly mornings or brunches.
Ingredients

- 1 box yellow cake mix
- 1/2 cup unsweetened applesauce
- 1/2 cup water
- 3 large eggs
- 1 tablespoon ground cinnamon
- 1/4 cup sugar
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- Combine the yellow cake mix, applesauce, water, and eggs in a large bowl. Mix until smooth.
- Mix together cinnamon and sugar in a small bowl.
- Pour half of the cake batter into the prepared pan. Sprinkle half of the cinnamon mixture over the batter.
- Pour the remaining batter on top, and sprinkle with the remaining cinnamon mixture and optional nuts.
- Swirl the cinnamon mixture into the batter gently using a knife.
- Bake for 25-30 minutes, or until a toothpick comes out clean. Let cool before serving.
Notes
You can prepare the batter a day in advance. Leftover cake can be stored in an airtight container at room temperature for up to three days or in the fridge for a week.
