Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 cup dried cranberries (for topping)
  • 1/4 cup white chocolate, melted (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy in another bowl.
  4. Add the eggs and vanilla extract to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the dried cranberries and white chocolate chips, ensuring they’re evenly distributed.
  7. Pour the mixture into the prepared baking pan, spreading it out evenly.
  8. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool in the pan before transferring to a cooling rack.
  10. Beat the cream cheese, powdered sugar, and vanilla together until smooth for the frosting.
  11. Spread the cream cheese frosting generously over the cooled bars.
  12. Sprinkle the extra dried cranberries over the frosted bars and drizzle the melted white chocolate on top.
  13. Cut into squares, serve, and enjoy!
