- 1 can (15 oz) corn (drained) or 2 cups fresh or frozen corn
- 8 oz cream cheese (softened)
- 1 cup sour cream
- 1/2 cup butter (melted)
- 1 cup shredded cheddar cheese
- 1/2 cup cornmeal
- 1/4 cup sugar
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the cream cheese, sour cream, and melted butter in a large mixing bowl until smooth.
- Stir in the corn, cornmeal, sugar, salt, and pepper until well combined.
- Fold in the shredded cheddar cheese, mixing throughout the batter.
- Pour the mixture into a greased 9×13 inch baking dish, ensuring it spreads evenly.
- Bake for 45-50 minutes, or until golden brown and set.
- Allow to cool for a few minutes before serving.
Notes
Prep the casserole a day in advance and store in the refrigerator. Leftovers can be kept in an airtight container for up to 3 days.
