Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • 8 small flour or corn tortillas
  • Your favorite taco toppings (lettuce, tomatoes, cheese, avocado, sour cream, etc.)

Instructions

  1. Sauté the onions in olive oil over medium heat until translucent, about 4-5 minutes.
  2. Cook the chicken breasts whole, seasoning with salt, pepper, and taco seasoning, for about 5 minutes on each side.
  3. Add garlic and cook for another minute, then stir in chicken broth and bring to a simmer.
  4. Simmer for 15-20 minutes until chicken is cooked, then shred it with two forks.
  5. Add heavy cream and stir until chicken is coated, heating through for 2-3 minutes.
  6. Assemble the tacos with the creamy chicken mixture and your favorite toppings.
