Description

A cozy and creamy chorizo pasta dish perfect for weeknight dinners.

Ingredients

Scale
  • 14 ounces rigatoni
  • 1 tablespoon unsalted butter
  • 11 ounces spicy chorizo sausage
  • 6 garlic cloves (minced)
  • 4 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup heavy cream
  • ½ cup grated Parmesan
  • 2 tablespoons chopped parsley (optional)

Instructions

  1. Prep your ingredients: Start by mincing the garlic cloves, grating the Parmesan cheese, and removing the casings from the sausages. Cut the chorizo into smaller pieces for even cooking.
  2. Boil the pasta: In a large pot, bring generously salted water to a boil. Add the rigatoni and cook until al dente. Once ready, drain the pasta, but reserve about 1 cup of the cooking water for later.
  3. Sauté the chorizo: In a large skillet, melt the unsalted butter over medium heat. Add the chorizo and sauté for about 5 minutes until it starts to get slightly crispy and releases its flavorful oils.
  4. Add garlic and tomato paste: Stir in the minced garlic and cook for another minute, until fragrant. Then, add the tomato paste and let it cook for 3 minutes, stirring occasionally to deepen the flavors.
  5. Season and add cream: Sprinkle in the dried oregano, salt, and black pepper. Carefully pour in the heavy cream and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, and stir in the grated Parmesan until it’s perfectly melted and creamy.
  6. Combine with pasta: Toss the cooked rigatoni into the skillet, adding about ½ cup of the reserved pasta water as needed to achieve your desired sauce consistency. Taste and adjust seasoning if necessary.
  7. Finish with parsley: When everything is combined, sprinkle the dish with the chopped parsley for a touch of freshness. Serve immediately and dive into the comforting flavors of this creamy chorizo pasta!
