- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add to the skillet. Cook for 6-7 minutes on each side until golden and cooked through, then remove from the skillet and set aside.
- Add minced garlic to the same skillet and cook until fragrant, about 1 minute.
- Stir in the cherry tomatoes and cook until they start to soften, approximately 3-4 minutes.
- Add the spinach and cook until wilted, about 1 minute.
- Pour in the heavy cream, then add the grated Parmesan cheese and Italian seasoning. Stir to combine and bring to a gentle simmer.
- Return the chicken to the skillet, coating it well with the creamy sauce. Let simmer for a few more minutes.
- Garnish with fresh basil and serve over your choice of pasta or rice.
Notes
For added flavor, consider adding lemon juice or sun-dried tomatoes. Leftovers can be stored for up to 3 days in the fridge.
