Description

A comforting, creamy dish featuring tender chicken and a luscious sauce with garlic, cherry tomatoes, and spinach, perfect for weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add to the skillet. Cook for 6-7 minutes on each side until golden and cooked through, then remove from the skillet and set aside.
  3. Add minced garlic to the same skillet and cook until fragrant, about 1 minute.
  4. Stir in the cherry tomatoes and cook until they start to soften, approximately 3-4 minutes.
  5. Add the spinach and cook until wilted, about 1 minute.
  6. Pour in the heavy cream, then add the grated Parmesan cheese and Italian seasoning. Stir to combine and bring to a gentle simmer.
  7. Return the chicken to the skillet, coating it well with the creamy sauce. Let simmer for a few more minutes.
  8. Garnish with fresh basil and serve over your choice of pasta or rice.

Notes

For added flavor, consider adding lemon juice or sun-dried tomatoes. Leftovers can be stored for up to 3 days in the fridge.
