Description

A cozy comfort food delight featuring tender shrimp in a creamy, decadent sauce with sun-dried tomatoes and fresh spinach.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp fresh basil, chopped
  • Salt and pepper to taste
  • Optional: cooked pasta or mashed potatoes for serving

Instructions

  1. Heat olive oil over medium heat in a large skillet.
  2. Add the garlic and sauté until fragrant, about 1 minute.
  3. Cook the shrimp until they turn pink, about 3-4 minutes.
  4. Stir in the sun-dried tomatoes and spinach, cooking until the spinach wilts.
  5. Pour in the heavy cream and bring to a simmer.
  6. Stir in the Parmesan cheese and basil, then season with salt and pepper to taste.
  7. Serve the creamy Tuscan shrimp over cooked pasta or with mashed potatoes.

Notes

Make the sauce ahead of time and reheat before adding shrimp and spinach for the best texture.
