- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp fresh basil, chopped
- Salt and pepper to taste
- Optional: cooked pasta or mashed potatoes for serving
Instructions
- Heat olive oil over medium heat in a large skillet.
- Add the garlic and sauté until fragrant, about 1 minute.
- Cook the shrimp until they turn pink, about 3-4 minutes.
- Stir in the sun-dried tomatoes and spinach, cooking until the spinach wilts.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese and basil, then season with salt and pepper to taste.
- Serve the creamy Tuscan shrimp over cooked pasta or with mashed potatoes.
