- 2 cups water
- 2 Earl Grey tea bags
- 1/2 cup fresh or frozen raspberries (plus more for garnish)
- 2 tbsp honey or sugar (adjust to taste)
- Juice of 1/2 lemon
- Ice cubes
- Fresh lemon slice or a mint sprig for garnish (optional)
Instructions
- Brew the tea: In a small saucepan, add half of the water (1 cup) and bring it to a gentle simmer. Keep the other half of the water (1 cup) in the refrigerator. Once the water is simmering, add the raspberries and mash them gently with a spoon or fork, letting their juicy essence infuse the water. Then, drop in the Earl Grey tea bags and brew for about 5 minutes, allowing the flavors to meld beautifully.
- Strain & add lemon juice + sweetener: Carefully strain the tea mixture into a heat-proof pitcher or container, discarding the tea bags and raspberry pulp. Stir in the freshly squeezed lemon juice and your choice of honey or sugar. Taste with a spoon and adjust the sweetness if you prefer a different balance.
- Chill: Add the remaining cup of cold water into the pitcher and place the tea in the fridge to cool completely. This step is essential; it allows the flavors to sit and deepen.
- Serve: Once chilled, fill your favorite glasses with ice cubes, then pour the tea over the ice.
- Garnish and enjoy: Finish off the drink with fresh raspberries and, if you like, a slice of lemon or a sprig of mint to add a lovely finishing touch. Sip and enjoy the bliss of summer!
