Ingredients

- 8 ounces pasta (penne or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella balls
- 1/3 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions; drain and rinse with cold water to cool.
- Combine the cooled pasta with cherry tomatoes, cucumber, red onion, bell pepper, black olives, mozzarella balls, and fresh basil in a large bowl.
- Whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl until smooth.
- Pour the dressing over the pasta salad and gently toss to coat evenly.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
This salad can be made ahead of time and tastes even better the next day.
