Description

A vibrant and customizable pasta salad that brings summer flavors to your table.


Ingredients

  • 8 ounces pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella balls
  • 1/3 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and rinse with cold water to cool.
  2. Combine the cooled pasta with cherry tomatoes, cucumber, red onion, bell pepper, black olives, mozzarella balls, and fresh basil in a large bowl.
  3. Whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl until smooth.
  4. Pour the dressing over the pasta salad and gently toss to coat evenly.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be made ahead of time and tastes even better the next day.
