- 1 onion, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 3 garlic cloves, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup green beans, trimmed and cut
- 1 cup spinach or kale
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery; sauté until softened, about 5-7 minutes.
- Stir in the garlic, zucchini, and bell pepper, cooking for another 3 minutes until fragrant.
- Pour in the vegetable broth and diced tomatoes; add the thyme, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the green beans and spinach (or kale) to the pot and cook for an additional 5-10 minutes.
- Adjust seasoning if needed and serve hot.
