Ingredients

- 1 lb chicken breast, boneless and skinless
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 4 garlic cloves, minced
- 2 tsp dried oregano
- Salt, to taste
- Black pepper, to taste
- 2 bell peppers (any color), cut into chunks
- 1 red onion, cut into chunks
- Skewers, soaked in water if wooden
Instructions
- Mix olive oil, lemon juice, minced garlic, oregano, salt, and black pepper until well combined.
- Cut the chicken into cubes and marinate in the mixture for at least 30 minutes.
- Prepare the bell peppers and red onion, cutting them into chunks.
- Thread the marinated chicken, bell peppers, and onion onto the skewers, alternating between them.
- Preheat the grill to medium-high heat.
- Grill the kabobs for about 10-15 minutes, turning occasionally until cooked through.
- Serve on a platter and enjoy, garnished with fresh herbs or feta if desired.
Notes
Marinate the chicken overnight for more intense flavors. Substitute chicken with shrimp or beef for variety.
