Description

Delicious and easy Greek Chicken Kabobs, perfect for summer gatherings and weeknight dinners, packed with flavor and colorful veggies.


Ingredients

  • 1 lb chicken breast, boneless and skinless
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 2 bell peppers (any color), cut into chunks
  • 1 red onion, cut into chunks
  • Skewers, soaked in water if wooden

Instructions

  1. Mix olive oil, lemon juice, minced garlic, oregano, salt, and black pepper until well combined.
  2. Cut the chicken into cubes and marinate in the mixture for at least 30 minutes.
  3. Prepare the bell peppers and red onion, cutting them into chunks.
  4. Thread the marinated chicken, bell peppers, and onion onto the skewers, alternating between them.
  5. Preheat the grill to medium-high heat.
  6. Grill the kabobs for about 10-15 minutes, turning occasionally until cooked through.
  7. Serve on a platter and enjoy, garnished with fresh herbs or feta if desired.

Notes

Marinate the chicken overnight for more intense flavors. Substitute chicken with shrimp or beef for variety.
