Description

Ingredients

  • 1 lb Grilled chicken
  • 1 cup Quinoa
  • 1/2 cup Feta cheese
  • 1/4 cup Olives
  • 1/2 cup Homemade tzatziki
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 2 cloves Garlic, minced
  • 1 medium Cucumber, chopped
  • 2 tbsp Fresh dill, chopped
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. Cook the quinoa: As instructed on the package. Rinse it well before cooking; it’ll add a nice fluffiness!
  2. Grill the chicken: Season your chicken breasts with olive oil, salt, and pepper, then grill until fully cooked. Slice it up and set aside.
  3. Make your tzatziki: In a bowl, mix together yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper.
  4. Assemble the bowls: Start by placing a scoop of quinoa at the base. Add grilled chicken slices, a handful of olives, and a sprinkle of crumbled feta cheese.
  5. Finish it off: Drizzle with tzatziki and a touch of olive oil before serving.
