Ingredients

  • 1 lb chicken breast, cubed
  • 1 bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp honey
  • 3 tbsp soy sauce
  • 1 tsp salt
  • 1 tsp pepper
  • Skewers (wooden or metal)

Instructions

  1. In a bowl, mix together olive oil, minced garlic, honey, soy sauce, salt, and pepper to create the marinade.
  2. Add cubed chicken and chopped vegetables (bell peppers, onion, zucchini, and cherry tomatoes) to the marinade, tossing to coat everything evenly.
  3. Allow marinating for at least 30 minutes in the refrigerator.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken and vegetables onto skewers, alternating between chicken and vibrant vegetables.
  6. Grill kabobs for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
  7. Serve hot and enjoy fresh off the grill.
