Description

A flavorful escape to sunny days with grilled chicken marinated in creamy coconut milk, zesty lime, and aromatic spices.


Ingredients

  • 1 pound chicken breast, cut into cubes
  • 1 can coconut milk
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Skewers (soaked in water if wooden)
  • Fresh cilantro for garnish

Instructions

  1. Combine coconut milk, soy sauce, lime juice, brown sugar, garlic, and ginger in a bowl to create the marinade.
  2. Add the chicken cubes to the marinade and let it marinate for at least 30 minutes.
  3. Preheat the grill to medium heat.
  4. Thread the marinated chicken onto skewers, leaving space for even cooking.
  5. Grill the skewers for about 8-10 minutes, turning occasionally, until the chicken is golden and cooked through.
  6. Garnish with fresh cilantro before serving.

Notes

For best flavor, marinate overnight. Serve with jasmine rice or fresh salad.
