- 2 large eggs
- ½ cup pumpkin puree (150g)
- ⅓ cup pure maple syrup
- ¼ cup coconut sugar
- ½ cup melted coconut oil
- 1 tsp vanilla extract
- ⅔ cup oat flour
- ¾ cup rolled oats
- 1 tbsp pumpkin pie spice
- ½ tsp baking soda
- ½ cup chocolate chips
Instructions
- Preheat your oven to 350ºF. Line or grease an 8×8 inch pan with parchment paper and set aside.
- Whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until creamy and smooth.
- Fold in the oat flour, rolled oats, pumpkin spice, and baking soda until just combined.
- Add the chocolate chips and mix well, ensuring they are evenly distributed.
- Pour the batter into the lined pan, using a spatula to spread it out evenly. Sprinkle some extra chocolate chips on top for a delicious finishing touch.
- Bake for 24 – 26 minutes or until a toothpick inserted into the center comes out clean and the bars are beautifully golden brown.
- Allow to cool for at least 10 minutes before cutting into bars. Enjoy every delicious bite!

These bars can be stored in an airtight container for up to a week and can be frozen for up to three months.
