- 1 pound colorful carrots (also known as rainbow carrots)
- 2 tbsp butter
- 2 tbsp honey
- 2 tbsp brown sugar
- Fresh thyme (to taste)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the colorful carrots, then cut them into even-sized pieces.
- In a small saucepan over low heat, melt the butter, honey, and brown sugar together. Stir until combined and remove from heat.
- Place the carrots in a large mixing bowl and drizzle the buttery honey mixture over them. Toss to coat. Add fresh thyme, salt, and pepper to taste.
- Spread the coated carrots on a baking sheet in a single layer. Roast for 25-30 minutes, turning halfway through.
- Remove from the oven and let cool slightly before serving.
- For air fryer, preheat to 375°F (190°C), cook for 15-20 minutes.
- Transfer air-fried carrots to your favorite serving dish.
Notes
Cut carrots into uniform pieces for even cooking. You can also prepare them in advance and refrigerate until ready to roast.
