Description

Delightful honey roasted colorful carrots bring warmth and sweetness to your dinner table, perfect for any occasion.


Ingredients

  • 1 pound colorful carrots (also known as rainbow carrots)
  • 2 tbsp butter
  • 2 tbsp honey
  • 2 tbsp brown sugar
  • Fresh thyme (to taste)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the colorful carrots, then cut them into even-sized pieces.
  3. In a small saucepan over low heat, melt the butter, honey, and brown sugar together. Stir until combined and remove from heat.
  4. Place the carrots in a large mixing bowl and drizzle the buttery honey mixture over them. Toss to coat. Add fresh thyme, salt, and pepper to taste.
  5. Spread the coated carrots on a baking sheet in a single layer. Roast for 25-30 minutes, turning halfway through.
  6. Remove from the oven and let cool slightly before serving.
  7. For air fryer, preheat to 375°F (190°C), cook for 15-20 minutes.
  8. Transfer air-fried carrots to your favorite serving dish.

Notes

Cut carrots into uniform pieces for even cooking. You can also prepare them in advance and refrigerate until ready to roast.
