  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • ½ cup mini marshmallows (optional for mix-in)
  • ½ cup unsalted butter, softened (for frosting)
  • 1 jar (7 oz) marshmallow crème or fluff
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract (for frosting)
  • 1 tablespoon heavy cream (optional, for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chocolate chips and optional mini marshmallows for an extra layer of sweetness.
  7. Scoop 1 ½-tablespoon portions of dough onto the prepared baking sheets, leaving space between each.
  8. Chill the dough balls in the refrigerator for 30 minutes if you prefer thicker cookies.
  9. Bake in the preheated oven for 9-10 minutes, or until the edges are just set and the centers look slightly soft.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  11. While the cookies cool, prepare the frosting: beat the softened butter until creamy, then mix in the marshmallow crème until smooth.
  12. Gradually add the powdered sugar, then mix in the vanilla extract, whipping until fluffy.
  13. Pipe or spread the marshmallow frosting onto the cooled cookies.
