- 1 tablespoon heavy cream (optional, for consistency)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chocolate chips and optional mini marshmallows for an extra layer of sweetness.
- Scoop 1 ½-tablespoon portions of dough onto the prepared baking sheets, leaving space between each.
- Chill the dough balls in the refrigerator for 30 minutes if you prefer thicker cookies.
- Bake in the preheated oven for 9-10 minutes, or until the edges are just set and the centers look slightly soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- While the cookies cool, prepare the frosting: beat the softened butter until creamy, then mix in the marshmallow crème until smooth.
- Gradually add the powdered sugar, then mix in the vanilla extract, whipping until fluffy.
- Pipe or spread the marshmallow frosting onto the cooled cookies.
