Description

This hearty Irish Chili is a comforting bowl of warmth, filled with ground beef, beans, and rich spices—perfect for chilly evenings.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 cup vegetable broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, green onions

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the kidney beans, black beans, diced tomatoes, tomato sauce, and vegetable broth.
  4. Add the chili powder, cumin, salt, and pepper, mixing it all to coat the ingredients.
  5. Bring the mixture to a gentle simmer, then reduce heat to low and let cook for about 30-40 minutes, stirring occasionally.
  6. Serve hot, allowing everyone to add their preferred toppings.

Notes

This chili can be made ahead of time as it tastes even better the next day! Leftovers can be stored in the fridge for up to 4 days or in the freezer for about 3 months.
