Description

Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapenos, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the chicken breasts to the skillet, searing for 3-4 minutes on each side until golden brown.
  5. Remove the chicken and set aside.
  6. Toss in the diced jalapenos and peaches into the skillet and cook for 2-3 minutes.
  7. Whisk together the honey, apple cider vinegar, water, and cornstarch until smooth.
  8. Pour the honey mixture over the jalapenos and peaches, stirring well.
  9. Return the chicken to the skillet, spooning sauce over the top.
  10. Transfer the skillet to the oven and bake for 20-25 minutes until cooked through.
  11. Let the chicken rest for a few minutes before serving.
  12. Serve hot, drenching in the fresh sauce.
