Delightful Key Lime Cupcakes that bring a slice of sunshine to your dessert table.
Ingredients

- 1 box White Cake Mix + box ingredients (usually eggs, oil, water)
- 1/2 cup Lime Juice
- 1 cup Butter (at room temperature)
- 4 cups Powdered Sugar
- 6 tbsp Lime Juice
- 2 tsp Lime Zest
- 1 drop Green Food Colouring
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- Prepare the cake batter according to the box instructions, replacing 1/2 cup of water with 1/2 cup lime juice.
- Divide the batter into the cupcake liners, filling each about halfway.
- Bake in the preheated oven for 16-18 minutes, or until a toothpick comes out clean.
- Remove from the oven and let the cupcakes cool completely on a wire rack.
- Cream the butter until light and fluffy in a large bowl.
- Gradually add the lime juice and a drop of green food coloring to the creamed butter.
- Add powdered sugar one cup at a time, beating until incorporated.
- Stir in the lime zest and whip until fluffy.
- Transfer the frosting to a piping bag and frost the cooled cupcakes.
Notes
Feel free to customize with coconut, graham cracker crust, or cream cheese frosting.
