Description

Delightfully refreshing bars combining lemon and blueberries, perfect for summer gatherings or quiet moments at home.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 cup blueberries
  • 1/4 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a 9×9 inch baking dish.
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Gradually add in the flour and salt, mixing until the dough comes together.
  4. Press the dough into the prepared baking dish evenly.
  5. Bake for about 20 minutes, or until the edges are lightly golden.
  6. Mix the blueberries with granulated sugar, lemon zest, and lemon juice in another bowl.
  7. Pour the blueberry mixture evenly over the baked shortbread crust.
  8. Bake for an additional 20-25 minutes, or until the topping is set and golden.
  9. Let cool completely before cutting into bars and serving.

Notes

These bars can be made a day in advance. Store tightly covered in the refrigerator.
