- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 cup blueberries
- 1/4 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C) and generously grease a 9×9 inch baking dish.
- Cream together the softened butter and powdered sugar until light and fluffy.
- Gradually add in the flour and salt, mixing until the dough comes together.
- Press the dough into the prepared baking dish evenly.
- Bake for about 20 minutes, or until the edges are lightly golden.
- Mix the blueberries with granulated sugar, lemon zest, and lemon juice in another bowl.
- Pour the blueberry mixture evenly over the baked shortbread crust.
- Bake for an additional 20-25 minutes, or until the topping is set and golden.
- Let cool completely before cutting into bars and serving.
