Description

Decadent and ultra-moist chocolate cupcakes perfect for any occasion, topped with a rich chocolate frosting.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 6 oz semi-sweet chocolate, melted
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup unsweetened cocoa powder (for frosting)
  • 2 teaspoons vanilla extract (for frosting)
  • 23 tablespoons heavy cream (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with your favorite liners.
  2. Mix together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Add in the eggs, milk, vegetable oil, and vanilla extract. Mix until everything is beautifully blended.
  4. Stir in the boiling water until the batter is smooth and silky.
  5. Fill the cupcake liners about 2/3 full with batter and place them in the preheated oven. Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cupcakes from the oven and let them cool completely on a wire rack.
  7. Beat the softened butter in a bowl until it’s creamy. Then add the melted chocolate and mix until combined.
  8. Gradually add the powdered sugar, cocoa powder, vanilla extract, and heavy cream, beating until you achieve your desired frosting consistency.
  9. Frost the cooled cupcakes generously and enjoy!

Notes

Allow eggs, milk, and butter to sit at room temperature for a smooth batter. These cupcakes can be made in advance and stored properly.
