Ingredients

- 8 ounces of pasta (bowties or shells)
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- 1 cup diced bell pepper
- 1/2 cup finely chopped red onion
- 1 cup sweet corn
- 1 cup shredded cheese (feta or mozzarella)
- 1 cup Italian dressing
- Salt and pepper to taste
- Fresh herbs (for garnish)
- Optional: turkey bacon bits
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until it’s tender. Drain and rinse under cold water. Set aside.
- Prep the veggies: Chop the cherry tomatoes, cucumber, bell pepper, and red onion.
- Mix it up: In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, and corn. Toss gently to combine.
- Dress it: Pour the Italian dressing over the pasta salad and mix well. Season with salt and pepper.
- Assemble the cups: Layer the pasta salad mixture into small cups or containers. Sprinkle turkey bacon bits if desired.
- Garnish and serve: Finish with fresh herbs. Serve immediately, or chill for about 30 minutes.
Notes
These pasta salad cups can be made a day in advance. Store any leftovers in an airtight container for up to 3 days.
