Description

Delightful and colorful pasta salad cups perfect for any occasion, easy to prepare with vibrant veggies and creamy dressing.


Ingredients

Scale
  • 8 ounces of pasta (bowties or shells)
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1 cup diced bell pepper
  • 1/2 cup finely chopped red onion
  • 1 cup sweet corn
  • 1 cup shredded cheese (feta or mozzarella)
  • 1 cup Italian dressing
  • Salt and pepper to taste
  • Fresh herbs (for garnish)
  • Optional: turkey bacon bits

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until it’s tender. Drain and rinse under cold water. Set aside.
  2. Prep the veggies: Chop the cherry tomatoes, cucumber, bell pepper, and red onion.
  3. Mix it up: In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, and corn. Toss gently to combine.
  4. Dress it: Pour the Italian dressing over the pasta salad and mix well. Season with salt and pepper.
  5. Assemble the cups: Layer the pasta salad mixture into small cups or containers. Sprinkle turkey bacon bits if desired.
  6. Garnish and serve: Finish with fresh herbs. Serve immediately, or chill for about 30 minutes.

Notes

These pasta salad cups can be made a day in advance. Store any leftovers in an airtight container for up to 3 days.
