- 2 1/2 cups (350 g) all-purpose flour
- 2/3 cup (140 g) granulated sugar
- 1/2 teaspoon salt
- 1 1/4 cups (280 g) cold unsalted butter, cut into small cubes
- 1/4 cup (50 g) brown sugar, preferably dark
- 1 cup (200 g) granulated sugar
- 1/4 cup (35 g) all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 5 cups pitted, peeled, and chopped peaches (about 7–8 peaches)
- 6 tablespoons (90 ml) heavy cream
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Preheat your oven to 350°F (180°C). Grease a 9×13-inch pan or line it with parchment paper.
- Combine 2 1/2 cups flour, 2/3 cup sugar, and 1/2 teaspoon salt in a food processor. Pulse until mixed.
- Add the cold butter cubes and pulse until crumbly. Set aside 1½ cups for later.
- Press the remaining crumbs into the prepared pan to form the crust. Bake for about 15 minutes until slightly browned.
- Mix the brown sugar into the reserved crumb mixture to form the streusel topping.
- In a large bowl, mix together 1 cup sugar, 1/4 cup flour, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Add chopped peaches and toss.
- Stir in heavy cream and optional vanilla extract into the peach mixture.
- Remove the crust from the oven and pour the peach filling over it. Sprinkle the streusel topping evenly on top.
- Bake for about 45 minutes or until bubbling and golden brown. Allow to cool on a wire rack.
- Refrigerate for at least 2 hours before cutting into squares.
Notes
These bars keep well in the refrigerator for about three days. You can make them a day in advance for optimal flavor.
