Description

Delightful and nostalgic Peaches and Cream Crumble Bars, perfect for summer gatherings with creamy filling and a crumbly topping.


Ingredients

  • 2 1/2 cups (350 g) all-purpose flour
  • 2/3 cup (140 g) granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups (280 g) cold unsalted butter, cut into small cubes
  • 1/4 cup (50 g) brown sugar, preferably dark
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (35 g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 cups pitted, peeled, and chopped peaches (about 78 peaches)
  • 6 tablespoons (90 ml) heavy cream
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9×13-inch pan or line it with parchment paper.
  2. Combine 2 1/2 cups flour, 2/3 cup sugar, and 1/2 teaspoon salt in a food processor. Pulse until mixed.
  3. Add the cold butter cubes and pulse until crumbly. Set aside 1½ cups for later.
  4. Press the remaining crumbs into the prepared pan to form the crust. Bake for about 15 minutes until slightly browned.
  5. Mix the brown sugar into the reserved crumb mixture to form the streusel topping.
  6. In a large bowl, mix together 1 cup sugar, 1/4 cup flour, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Add chopped peaches and toss.
  7. Stir in heavy cream and optional vanilla extract into the peach mixture.
  8. Remove the crust from the oven and pour the peach filling over it. Sprinkle the streusel topping evenly on top.
  9. Bake for about 45 minutes or until bubbling and golden brown. Allow to cool on a wire rack.
  10. Refrigerate for at least 2 hours before cutting into squares.

Notes

These bars keep well in the refrigerator for about three days. You can make them a day in advance for optimal flavor.
