- 1 cup creamy peanut butter
- 1 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup jelly or jam (your favorite flavor)
- Optional: powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the creamy peanut butter, brown sugar, egg, vanilla extract, baking soda, and salt in a large mixing bowl.
- Grease a muffin tin generously with cooking spray or line with mini cupcake liners.
- Scoop about one tablespoon of the cookie dough into each muffin tin cup and press down the center.
- Bake for 10-12 minutes, or until the cookie edges are golden brown.
- Remove from the oven and cool for a couple of minutes, pressing the centers down a bit more.
- Dollop about a teaspoon of jelly into each cookie cup once cooled.
- Dust with powdered sugar just before serving, if desired.
