Description

Indulgent mini cookie cups filled with your favorite jelly, blending nostalgic flavors of peanut butter and jelly in a delightful treat.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup jelly or jam (your favorite flavor)
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the creamy peanut butter, brown sugar, egg, vanilla extract, baking soda, and salt in a large mixing bowl.
  3. Grease a muffin tin generously with cooking spray or line with mini cupcake liners.
  4. Scoop about one tablespoon of the cookie dough into each muffin tin cup and press down the center.
  5. Bake for 10-12 minutes, or until the cookie edges are golden brown.
  6. Remove from the oven and cool for a couple of minutes, pressing the centers down a bit more.
  7. Dollop about a teaspoon of jelly into each cookie cup once cooled.
  8. Dust with powdered sugar just before serving, if desired.
