- 1 can pineapple rings or fresh pineapple, sliced
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup milk
- 1 large egg
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- Combine the flour, sugar, baking powder, salt, and cinnamon in a bowl.
- Whisk the milk and egg in another bowl until creamy.
- Pour the wet ingredients into the dry ingredients, mixing gently until just combined.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Dip each pineapple ring into the batter, letting excess drip off.
- Fry for about 2-3 minutes on each side until golden brown.
- Remove from oil and drain on paper towels.
- Dust with powdered sugar before serving.
Notes
Prepare the batter in advance and store in the fridge for a few hours. For a gluten-free version, use a gluten-free flour blend with xanthan gum.
