These Quick Pickled Radishes are a vibrant and zesty addition to salads, tacos, or enjoyed straight from the jar.
Ingredients

- 1 bunch of fresh radishes
- 1 cup of water
- 1 cup of white vinegar
- 2 tablespoons of sugar
- 1 tablespoon of salt
- 1 teaspoon of peppercorns (optional)
- 1 teaspoon of mustard seeds (optional)
- 1 clove of garlic (sliced, optional)
Instructions
- Wash and slice the radishes into thin rounds.
- Combine the water, white vinegar, sugar, and salt in a small pot.
- Heat the mixture over medium heat until the sugar and salt dissolve completely.
- Add peppercorns, mustard seeds, and sliced garlic if desired.
- Place the sliced radishes in a clean jar.
- Pour the pickling liquid over the radishes, ensuring they’re fully submerged.
- Cool the jar to room temperature and then refrigerate.
- Allow the radishes to pickle for at least 1 hour before serving.
Notes
These quick pickled radishes can be made up to a week in advance and enjoyed for about two weeks in the fridge.
