Description

Delight in these cozy and flavorful Roasted Corn Ribs, perfect for a comforting autumn dish.


Ingredients

  • 4 corn cobs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the corn by snapping the cobs in half and slicing lengthwise, then cut each half into quarters.
  3. Add the corn pieces to a ziplock bag or bowl with olive oil and spices, and mix until coated.
  4. Spread the corn ribs in a single layer on a baking sheet.
  5. Bake in the preheated oven for 25–35 minutes until golden.

Notes

Leftovers can be stored in an airtight container in the fridge for 3–4 days. For even easier slicing, microwave the cobs for about 30 seconds to soften them.
