Description

Ingredients

  • 34 pounds beef roast (such as ribeye or sirloin)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup beef broth (for braising)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine minced garlic, chopped rosemary, olive oil, salt, and pepper in a small bowl.
  3. Rub the fragrant mixture all over the beef roast.
  4. Place the roast in a roasting pan and add the beef broth to the bottom of the pan.
  5. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness.
  6. Let the roast rest for about 15 minutes before slicing.
  7. Serve with the pan juices drizzled on top.

Notes

For best results, rest the beef before slicing and consider making the garlic and rosemary rub a day in advance.
