Description

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can diced Ro-tel tomatoes (with green chilies)
  • 1 cup corn (frozen or fresh)

  • 1 cup Tex-Mex cheese, shredded
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
