- 1 cup rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 2 cups beef broth
- Salt and pepper to taste
- Optional: shredded cheese, green onions for garnish
Instructions
- Brown the ground beef in a large skillet over medium heat. Drain excess fat.
- Add the chopped onion, garlic, and bell pepper; sauté until softened.
- Stir in the rice and cook for 2 minutes.
- Pour in the diced tomatoes and beef broth; bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes until rice is cooked.
- Season with salt and pepper to taste.
- Top with optional shredded cheese and green onions before serving.
